Need something sweet to take to your next holiday party? If you have some New Mexico pecans on hand, you’re sure to already have the other ingredients in these tasty and super simple pecan recipes.
Butter Pecan Cookies
Makes 24 cookies
1 ½ cups chopped pecans
1 cup unsalted butter
2/3 cup sugar
2 cups flour
2 tsp vanilla extract
1/4 tsp salt
Preheat oven to 350 degrees.
Roast pecans on a baking sheet 6-7 minutes. Let cool and chop fine.
Cream butter for 1 minute. Add in sugar and cream for another 1 minute.
Add in flour, vanilla, and salt and beat until dough forms. Add pecans.
Roll dough into balls and roll in sugar. Transfer to baking sheet.
Dip bottom of a glass in sugar and use to flatten balls. Gently reshape edges to ensure a pretty, round cookie.
Bake 15 minutes or until cookies are a golden brown.
Sprinkle with sugar and cool.

Sugar Roasted Pecans
1 egg white
1 Tbsp water
1 cup sugar
¾ tsp salt
½ tsp ground cinnamon
1 pound pecan halves (about 4 cups)
Preheat oven to 250 degrees and grease baking sheet.
In large bowl, whip egg white and water until frothy.
In another bowl, mix sugar, salt, and cinnamon.
Coat pecans in egg white mixture then toss in sugar mixture until fully coated.
Spread nuts evenly on baking sheet.
Bake for 1 hour, stirring every 15 minutes.
