Want to do something special for your Valentine this year? How about a home-cooked meal for two? Chef Frankie Torres, owner of Chala’s Wood Fire Grill, shared with us how he would whip up a special meal for his wife:
“Steak for sure is totally Valentine’s, and what sets off a steak for me is a rub. Rubs are super simple to make at home. Just open up your pantry. I’m sure you have tons of spices in there.
For a steak, start with coffee. Whatever coffee you drink, start with say 1 tablespoon of grounds. Then start adding in whatever sounds good, like say a tablespoon of garlic, kosher salt, brown sugar, some type of chile powder; maybe a throw in a little bit of cumin or oregano. You really can’t go wrong. Start by smelling the spice and if you think it’s too strong then maybe just do a teaspoon or half a teaspoon. Mix it all together and rub it all over your steak, then grill it.
You can’t go wrong serving it with some type of small, creamy potato. Some that get overlooked are fingerling and broiler potatoes. Or try Brussels sprouts. What a lot of people don’t realize is that you can use an apple corer to remove the cores of Brussels sprouts and then you just have the leaves. Sauté those in a pan until just wilted.”
Pop open a bottle of wine, have something chocolate on hand for dessert and you’re set!
Bonus Tip: If you really want to get in good with your significant other, Frankie recommends adding some scallops. Just grill them right alongside your steak.
