In the Kitchen: Chill Out!

It’s no secret that things tend to get a little hot in these parts. Our favorite way to beat the heat? Head to the kitchen and whip up something cool and sweet. From adults-only concoctions to the ultimate iced coffee, here are some of the best summer drink recipes we could find, along with all the must-have tools to stock in your home kitchen or bar.

New Mexico’s Elite Bartender

If you want to try your own hand at it, read on for Chance’s best tips for would-be bartenders, what tools he always has handy, and two of his favorite summer recipes. Bonus: One is kid-friendly!

How To Chill Out with the Ultimate Cocktail

  1. Always use fresh ingredients when possible. Don’t use pasteurized or canned. The freshest will always have the best flavor. That’s especially true with juices—orange, lime, etc.
  2. Experiment and have fun with it. You never know what flavor pairings are going to go well together, so try it out. For my Dragon Fruit Pina Colada, instead of using rum like a typical Pina Colada, I used an apple whiskey and the flavor worked out nicely.
  3. Practice on your friends, but pick people that will be honest with you. Some people will just say, “Oh yeah, this tastes great,” but in all reality it might taste like cough syrup.

Award Winning Drink!

The Bloody Scotch
1 oz. ginger puree
1 oz. Laphroaig Scotch
½ oz. fresh blood oranges

Muddle ingredients, strain, and pour over a rosemary ice ball.

Dragon Fruit Piña Colada

Blend together one dragon fruit (find them at Toucan Market,
1701 E. University, toucanmarket.com) and a can of Cream of Coconut (find it on the International Foods aisle at any supermarket) to create a Piña Colada mix.

For Kids: Blend the Piña Colada mix with ice. Serve garnished with an apple slice and drizzled with caramel.
For Adults: Blend the Piña Colada mix with ice and 2 oz. of Jim Beam Apple. Serve with cinnamon sprinkled on top.

Ginger & Lavender
Infused Vodka Slush
Makes 6 servings

Chill Out! Cocktail

2 cups water
2 cups superfine sugar
2 tablespoons dried lavender
1 (1-inch) piece fresh ginger, peeled and sliced
6 cups ice
1/2 cup vodka
1/4 cup fresh lemon juice
1 teaspoon chopped fresh mint
Fresh lavender sprigs (optional)

Bring water and sugar to a boil in small saucepan over medium-high heat. Reduce heat to low; simmer 5 minutes. Remove from heat. Add lavender and ginger; let steep 1 hour. Strain syrup; set aside until ready to use. Can be made ahead; store in an airtight container up to 2 weeks.

Place ice in KitchenAid Diamond Blender. Pulse on speed 2 (Chop) 6 to 8 times. Add vodka, lemon juice, 1⁄3 cup lavender-ginger syrup and mint. Blend on speed 5 (Liquify) 1 minute. Serve immediately with fresh lavender sprigs, if desired.

Frozen Strawberry Daiquiri
Makes 2 servings

2 cups ice
10 fresh strawberries, hulled
3 oz. light rum
3 oz. fresh lime juice
1 oz. triple sec
1 oz. strawberry liqueur
2 teaspoons sugar or simple syrup
Strawberry and lime slices

Chill Out! CocktailPlace ice, whole strawberries, rum, lime juice, triple sec, strawberry liqueur, and sugar in pitcher of KitchenAid Torrent Blender. Cover and blend on Icy Drinks/Smoothies setting.

Pour into two glasses; garnish with strawberry and lime slices.
